Republic teams up with Bloomfield neighbor Auerfarm for a farm-to-table dinner July 25, with five courses paired with wine and cocktails. The dinner will be held at the farm (185 Auer Farm Rd.) at 6:30 p.m.
Courses include burrata and Armagnac-glazed figs with Serrano ham, day boat scallops with pineapple and ancho peppers, slow-cooked sockeye salmon with heirloom tomato consomme and fresh basil; roast duck breast with strawberry rhubarb chutney, dandelion greens and white chocolate fondue; Colorado rack of lamb with couscous, grilled corn, mango chutney and carrot curry sauce and Thomas Hooker Demure Smoked Saison ice cream and blueberry compote.
