Gingerbread Men Making

1 cup packed brown sugar
1 ¼ cups molasses
1 cup butter or margarine, softened
1 tablespoon baking soda
1 teaspoon salt
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
3 cups all-purpose flour
5 cups all-purpose flour
In large bowl with mixer at low speed, beat first 11 ingredients until just mixed, constantly scraping bowl with rubber spatula. Increase speed to medium; beat 2 minutes, occasionally scraping bowl and spatula. With wooden spoon, stir in 5 cups all-purpose flour to make a stiff dough. Divide dough in half and cover with plastic wrap. Use dough immediately or refrigerate to use within two days.
Preheat oven to 350 degrees. On lightly floured surface, with lightly floured rolling pin, roll half of dough 1/8-inch thick. With gingerbread man cookie cutter, cut as many cookies as possible.
With spatula, carefully arrange cookies on lightly greased or parchment-covered cookie sheets. Bake 12 minutes until edges of cookies are firm; immediately loosen cookies from sheet and remove to cool on wire racks. Repeat with remaining dough and re-roll scraps.
Decorate cookies with favorite frosting, raisins and candies.
