RECIPE: EASTER LEFTOVERS
When it comes to getting my family to eat leftovers I find that the more I change the way it looks and taste the more likely they’ll be to eat it! After Easter dinner there always seems to be plenty of leftovers – especially if you’ve served up a leg of lamb or a ham. I find that if I add in some un-conventional flavors, like curry spice, or use the meat as a filling for peppers, no one even realizes that it’s our Easter dinner leftovers. The recipe isn’t really a recipe at all. Just keep tweaking the flavors until it tastes good.
About 2 to 3 cups leftover lamb or ham, cubed
1 tablespoon (or to taste) Major Grey’s Chutney (mango chutney or substitute any fruit chutney or jam)
1 tablespoon (or to taste) Thai Red Curry Paste (or use Green Curry Paste for a milder flavor)
1 to 2 tablespoons mayonnaise (substitute sour cream, Greek yogurt, or use Greek yogurt with some fruit and omit the chutney)
