Salmon Mousse with Vegetable Dippers


HANDS-ON TIME: 25 minutes       TOTAL TIME: 30 minutes plus chilling time


Creamy and delicious—and brimming with omega-3s and vitamin D—this salmon mousse gets a health and flavor kick from horseradish, which has the same nutritious compounds as other members of the cruciferous vegetable family.


1 cup nonfat or low-fat plain yogurt

1 envelope unflavored gelatin

1 can (16 ounces) pink salmon, drained

2⁄3 cup reduced-fat sour cream

1 jar (6 ounces) prepared horseradish, drained and squeezed dry (about

1⁄4 cup)

3 tablespoons finely chopped red onion

1 tablespoon chopped fresh dill, or 1⁄2 teaspoon dried dill, crumbled

1 tablespoon Worcestershire sauce

1⁄2 teaspoon paprika

2 thick broccoli stalks (see Tips)

1 large red bell pepper, cut into 1⁄2-inch-wide strips

1 unpeeled cucumber, cut crosswise into slices
