Vegetables with Herbs & Mozzarella

3 oz fresh Mozzarella cheese
olive oil
2 oz zucchini - sliced
2 oz yellow squash - sliced
2 oz red pepper - sliced
basil (to taste)
ginger (to taste)

Marinate vegetable overnight in olive oil. Cut cheese into slices and serve with marinated vegetables. Garnish (to taste) with basil and ginger.

Beef Tenderloin Skewers

6 oz beef tenderloin
1 mango
1 red pepper
1 tsp minced garlic
olive oil

Mojo Sauce

2 Tbs minced garlic
2 Tbs cumin
2 Tbs finely chopped onion
2 Tbsp orange juice
2 Tbs olive oil

Cut mango and red peppers and marinate overnight in olive oil and garlic. Cut beef tenderloin into 1-2 inche cubes and thread onto skewers. Grill so meat is thoroughly cooked.

To make Mojo Sauce to drizzle on top of beef skewer, mix all ingredients in bowl and drizzle on top of skewers (or use as a dip).
