Fortified Breakfast Cereal

1 cup of your favorite high-fiber cereal (I love Kashi's Cinnamon Harvest cereal)
1/2-3/4 cup skim milk or almond milk
1/4 cup chopped apples or fresh berries (or frozen organic)
1 Tablespoon chopped almonds

Turkey Chili

2 Tablespoons extra virgin olive oil
1 medium yellow onion, chopped
2 Tablespoons ground cumin
1-3 teaspoons, red chili flakes
3 Tablespoons fresh garlic, chopped
1 lb. ground turkey breast (make sure it is ground turkey breast, not just ground turkey)
1 Tablespoon soy sauce
1 14.5 oz can of fire roasted organic crushed tomatoes
2 15 oz cans black beans
2 15 oz cans of kidney beans
1 cup of water or chicken broth
Optional: Jack or sharp cheddar cheese, fresh onion, or sour cream for topping

In a heavy-bottomed pot, sauté onion, cumin and pepper over medium heat with extra virgin olive oil. Do not let onions brown. As onions become soft, about 5 minutes, add garlic and cook about 2 minutes. Add ground turkey. Stir and smash up turkey. Add soy sauce. Add fire-roasted tomatoes. Add beans and water (or broth). Bring to a boil, turn down to medium heat and cook for 10 minutes. Serve with grated sharp cheddar or jack cheese, chopped fresh onion and sour cream.

Protein-Packed TomatoTofu Soup
Serving size 6-7

2 Tablespoons extra virgin olive oil
1/2 teaspoon salt
1/2 medium onion, chopped
1 Tablespoon chopped fresh garlic
1 Tablespoon agave nectar
2 handfuls, fresh basil leaves
2 28 oz cans of organic tomatoes
1 cup of water
1 lb. of soft organic tofu
Toasted bread (optional)

Heat olive oil in large sauté pan over medium heat. Add chopped onion. Sauté for 5 minutes until onions are soft, but not brown. Add garlic and one handful of basil and sauté for two minutes. Add tomatoes, salt, agave nectar and water; simmer for 10-15 minutes. Add tofu, crumble into sauce, heat thoroughly for 5 minutes. Use immersion blender, or pour sauce into a standard blender (make sure to keep crack in lid, to relieve pressure. careful not to blend when liquid is too hot). Add the other handful of basil.Thoroughly blend and serve immediately.
