Homemade Tortillas
"I usually have to double this recipe because we go through them quickly." Tender, chewy and simple, you'll never use store-bought tortillas again.

Prep/Total Time: 30 min.

Ingredients:
2 cups all-purpose flour
1/2 tsp. salt
1 cup water
3 Tbs olive oil

Directions:
In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 5-6 times. Divide dough into 8 portions. On a lightly floured surface, roll each portion into a 7-in. circle. In a large nonstick skillet coated with cooking spray, cook tortillas over medium heat for 1 minute on each side or until lightly browned. Keep warm.
Yield: 8 tortillas.


Potato-Sausage Foil Packs

Ingredients:
1 package (14 oz.) smoked turkey kielbasa, sliced
2 large potatoes, cut into wedges
1 each medium green, sweet red and yellow peppers, cut into 1-in. pieces
1 medium onion, chopped
4 tsp. lemon juice
4 tsp. olive oil
1/2 tsp. garlic powder
1/2 tsp. pepper
1/4 tsp. salt

Directions:
Divide the kielbasa, potatoes, peppers and onion among four double thicknesses of heavy-duty foil (about 18 in. x 12 in.). Drizzle with lemon juice and oil; sprinkle with garlic powder, pepper and salt. Fold foil around kielbasa mixture and seal tightly. Grill, covered, over medium heat for 30-35 minutes or until potatoes are tender. Open foil carefully to allow steam to escape.
Yield: 4 servings.

Farmer's Country Breakfast

Ingredients:
6 eggs
1/3 cup 2% milk
1/2 tsp. dried parsley flakes
1/4 tsp. salt
6 oz. bulk pork sausage
1-1/2 cups frozen cubed hash brown potatoes, thawed
1/4 cup chopped onion
1 cup (4 oz.) shredded cheddar cheese

Directions:
Whisk the eggs, milk, parsley and salt; set aside. In a large skillet, cook sausage over medium heat until no longer pink; remove and drain. In the same skillet, cook potatoes and onion for 5-7 minutes or until tender. Return sausage to the pan. Add egg mixture; cook and stir until almost set. Sprinkle with cheese.
Cover and cook for 1-2 minutes or until cheese is melted.
Yield: 4 servings.

Chocolate Dessert Wraps
I came up with this chocolate and peanut butter treat when I needed a unique, fast dessert for a special dinner. The filled tortillas take just minutes on the grill and get a chewy consistency from marshmallows.

Prep/Total Time: 20 min.

Ingredients:
1/2 cup creamy peanut butter
4 flour tortillas (8 in.)
1 cup miniature marshmallows
1/2 cup miniature semisweet chocolate chips
Vanilla ice cream
Chocolate shavings, optional

Directions:
Spread 2 Tbs of peanut butter on each tortilla. Sprinkle 1/4 cup marshmallows and 2 Tbs chocolate chips on half of each tortilla. Roll up, beginning with the topping side. Wrap each tortilla in heavy-duty foil; seal tightly. Grill, covered, over low heat for 5-10 minutes or until heated through. Unwrap tortillas and place on dessert plates. Serve with ice cream. Garnish with chocolate shavings if desired.
Yield: 4 servings.
Editor's Note: Crunchy peanut butter is not recommended for this recipe.
