Sweet and Savory French Toast

2 1/4 cups milk
1 cup heavy cream
½ cup sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
5 eggs
1/2 lb ham, diced
2 cups Swiss cheese, grated
12-14 slices white, hearty bread
2 tablespoons whole grain mustard
1 1/2 cups of real maple syrup

Coat a 9x13 pan lightly with pan spray. Cut bread in 1 inch pieces. Layer the bread, diced ham and 1 cup of Swiss cheese in the 9 x 13 pan. Whisk together milk, heavy cream, vanilla extract, salt &eggs. Pour over the bread mixture in the plan. Let stand several hours or overnight. Preheat oven to 350. Sprinkle top with remaining ½ cup Swiss cheese. Place in oven and bake for 45 minutes until egg mixture is cooked and cheese is melted & bubbling.
Whisk together the mustard and maple syrup. Serve on the side.

Fresh Fruit with Vanilla Vinaigrette

1 cup extra virgin olive oil
1/2 cup white balsamic vinegar
2 Tbs vanilla bean paste
4 Tbs sugar
1/4 tsp. salt pinch of black pepper
assorted fresh fruit, cubed

Whisk together the olive oil, vinegar, vanilla bean paste, sugar, slat and black pepper. Toss with fruit and serve.
