Crab Stuffing
Yield: 1/2 pound

Ingredients:
1 Tablespoon red bell pepper
1 Tablespoon celery
1 Tablespoon Spanish onion
1/8 teaspoon melted, unsalted butter
1/3 pound backfin crabmeat
1 Tablespoon parsley
2 teaspoons mayonnaise
pinch black pepper
pinch kosher salt

Directions:
Combine all ingredients in a large mixing bowl.


Blue Crab Stuffed Oysters
Yield: 8 oysters (2 servings)

Ingredients:
8 large oysters
1/2 lbs crab stuffing
1 cup Jarlsberg cheese
lemon (optional)
parsley (optional)

Directions:
Shuck all eight oysters and arrange oysters on half shell onto baking sheet. Spoon 1 ounces of crab stuffing onto each oyster. Sprinkle Jarlsberg cheese on top of each oyster. Broil oysters for 8 minutes or until cheese and stuffing are golden brown. Garnish with parsley and lemon wedges.
