White Bean Hummus Trio (adapted from The Flexitarian Diet)
Instead of serving a standard cheese and cracker tray, munch on this healthier option which is full of flavor and is at least 1/2 the calories and 8 times less fat.

Ingredients:
2 cans (15 oz each) white beans, rinsed & drained (such as great northern or cannellini beans)
1 Tablespoon olive oil
1 lemon, juiced
1 clove garlic, minced
1/2 teaspoon sea salt
1 teaspoon black pepper

Directions:
Mash all ingredients together with potato masher until smooth. Split into 3 small serving dishes and top each with a different combination of herbs & spices:
Flavor 1) dried dill, crumbled feta-cheese, sliced black olives
Flavor 2) chopped fresh basil, crushed red pepper flakes
Flavor 3) dried rosemary, crème of balsamic vinegar
Serve with toasted whole grain pita triangles, marinated artichokes, fresh vegetables such as peapods, cucumbers, grape tomatoes and carrots.
