Chicken A La Joe
(Recipe serves 2)

Ingredients:
1/2 whole chicken, cut into quarters
1/2 stick, unsalted butter
1/2 tsp. salt
1/2 tsp. ground black pepper
1/2 tsp. dried oregano
1/2 tsp. crushed red pepper flakes
1 med. red bell pepper, cut into strips
1 med. yellow bell pepper, cut into strips
1 med. green bell pepper, cut into strips
2 oz. pepperoncini, whole
1 lemon, halved

Directions:
Preheat oven to 475 degrees. Place the chicken, skin side down, in ovenproof pan. Add half of the butter (1/4 stick) into the pan. Season the chicken with half (1/4 tsp.) of each: salt, pepper, oregano, and crushed red pepper. Cook the chicken in the 475 degree oven for 35-40 minutes, flipping the chicken at the 25 minute mark. In a separate pan, combine the bell peppers, pepperoncinis, and the rest of the butter, salt, pepper, oregano, and crushed red pepper. Cook over medium heat for 10-15 minutes or until the bell peppers soften and the pepperoncinis flatten and release their juices. Place the chicken on a serving platter. Pour the pepper mixture over the chicken. Finish with a squeeze of lemon and serve.
