(Curly Kale in a Potato mash with smoked sausage)

3 lbs potatoes
2 yellow onions
20 oz curly kale stalks (removed and finely chopped)
salt and fresh ground pepper
1 teaspoon fresh garlic
1 smoked sausage
5 fl oz heavy cream
2 oz salted butter

Peel potatoes and cut into pieces. Peel and slice onion. Chop kale and sautee with onion and garlic salt and pepper for a few seconds just sweating the onion and garlic. Add water so it just tops the kale reduce for about 20 minutes. While this is going on, have your potatoes boiling in water until soft. While this is going on you can simmer the sausage over low heat in bacon fat if available. You can also get your butter and cream heated when the butter has melted. When potatoes and kale are done, drain potatoes and add to kale, then add the butter and cream. Mash them like you would mashed potatoes. Salt and pepper to taste. Serve with smoked sausage and pickled onion. A little white vinegar with the mash is always good or a good mustard for the sausage.
