Sherry Piccata Pork Tenderloin

Ingredients:
2 Tablespoons butter
2 cloves minced garlic
1/4 cup flour
1/2 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon white pepper
1 pork tenderloin, prepped
1/2 cup Holland House Sherry Cooking Wine
juice of 1/2 lemon
2 Tablespoons capers
1 Tablespoon chopped fresh parsley

Directions:
Prep pork tenderloin by removing extra fat and silver skin. Slice into 8 even circles. Using the palm of your hand, press down on each tenderloin circle to flatten. Place the flour, paprika, salt and white pepper in a re-sealable plastic bag. Close the bag and shake to combine ingredients. Open bag and place in the pork tenderloin slices, close bag and shake, coating each slices with the flour mixture. Melt butter in a medium-sized sauté pan over medium-high heat. When butter starts to turn light brown place in the slices of floured pork tenderloin. Sauté for approximately one and a half minutes on each side. Add the sherry wine for cooking to the pan along with the lemon juice, and capers. Combine everything in the pan and heat until the sauce thickens. Add chopped parsley right before service and enjoy. Makes two servings.
