Chicken andouille sausage smothered in a Holy Trinity Slaw and a remoulade sauce on a pretzel roll

Holy Trinity Slaw

2 Chayotes very small slices
1 red pepper very small slices
red onion very small slices
4 cloves of garlic chopped
2 chilli peppers into slices

1 cup sugar
1 teaspoon of salt
2/3 cup of vegetable oil
1 teaspoon of powdered mustard
I teaspoon of celery seed
1 cup of apple cider vinegar

Directions: Toss the Chayotes, peppers, onion and garlic in the Vinaigrette and let set in the cooler.

Apple and gouda chicken sausage, Crispy Apple Slaw with honey mustard dressing on whole wheat bun

Crispy Apple Slaw

2 Tbs of low fat plain yogurt
1 Tbs of grainy Dijon mustard
1/2 tsp of salt
1 1/2 tsps of honey
1 Tbs of apple cider vinegar
1/2 tsp of poppy seeds
1 large carrot, cut julienne or 1 cup matchstick-cut carrots
1-2 stalks celery, cut julienne
1 Granny Smith apple, cut into matchstick

Whisk together the yogurt, mustard, salt, honey, cider and poppy seeds. Mix the carrots and apples and celery together in a large bowl pour half of the dressing over them and toss. Keep adding dressing until you get the desired flavor.
