Healthy Bites with Chef Cory Morris at Mercat a la Planxa

After watching LHC host Jane Monzures work with chefs during her Healthy Bites challenges, it’s time to put yourself to the test! Don’t forget your $20 limit!

The Recipe:

Crab Salad Mix

Ingredient              Quantity Measure                       Prep
Crab Meat              0.25     #                             Picked threw for shells    Red Bell Peppers      2 TBLS                                     Small dice
Tarragon                1 TSP.                                     Picked and chopped
Parsley                  1 TSP.                               Washed, picked and chopped
Chives                   1 TSP.                                      Chopped thin
Crème Fraiche         1 TBLS.                                For consistency (check)
Salt and Pepper       To Taste

Method: Pick crab and remove all of the shell pieces. Mix all ingredients together and chill.

Watermelon/Tomato Gazpacho
Ingredient              Quantity Measure                       Prep
Roma Tomato             3 Ea                    Cored, pealed, washed and quartered
Watermelon               1 Quart                                Large diced
Garlic                        1 Cloves
Mineral Water             1 Cup
Stale Bread                1 Oz                                   Crust removed
Evo                          1/4 Cup
Salt                          To Taste
Sugar                        To Taste

Method: Place all ingredients in a Robot Coupe and puree until smooth.

Serve: The Gazpacho and Salad should be served together and will feed about 2 people.
Jane worked alongside Chef Cory Morris to prepare this delicious Gazpacho and Crab Salad Mix.
