Three Cheese Macaroni with Bacon
4 slices turkey bacon or center-cut bacon
1 ½ cups whole wheat pasta (e.g. shells, penne, or elbow macaroni)
Nonstick cooking spray
1 tbsp olive oil
1 tbsp all-purpose flour
½ cup milk (fat-free or 1%)
½ cup cauliflower puree (can be made with frozen cauliflower)
1 cup 2% reduced-fat cheddar cheese, shredded
½ cup Cabot 75% reduced-fat white cheddar cheese, shredded
5 wedges The Laughing Cow Light Creamy Swiss Cheese
½ tsp salt (optional)
1/8 tsp paprika
1/8 tsp pepper
Cook bacon until crispy (in skillet or in microwave), set aside.
