I would like to celebrate "Eat Dinner Together Week" by sharing my children's FAVORITE dinner recipe. This recipe is easy and delicious.  I have been making this for about 16 years.  All three kids ask for this every time they want some comfort food! I recently served it with grilled summer squash & zucchini - YUM!

  • 3-4 boneless, skinless chicken breasts, cooked & cubed
  • 1 can Healthy Recipe cream of celery soup
  • 1 c. fat-free sour cream
  • ½ teaspoon celery salt  
  • 1 c. low-sodium, fat-free chicken broth
  • 6 Tablespoons butter or margarine, melted  
  • 8-ounces  Pepperidge Farms stuffing mix (blue bag)
  • Chicken breast - you could use a store-bought cooked chicken OR boil chicken breast with a little poultry seasoning and salt.

In medium mixing bowl combine soup, sour cream and celery salt, add cubed chicken.  
In medium mixing bowl combine stuffing mix, chicken broth and melted margarine.  
Spray a 1 ½ quart casserole dish with non-stick cooking spray.  Spread ½ stuffing mix in casserole.  Add chicken mixture.  Top with remaining stuffing mixture.  
Preheat oven to 350 degrees.  Bake covered 25 minutes.  Remove cover and bake 20 minutes more.
