Bite into Cantina Laredo
If you’re looking for Mexican food in an elegant atmosphere with impeccable service and some of the best damn ‘ritas to ever touch your lips, Cantina Laredo  in Palm Beach Gardens  is the whole enchilada.

There’s no cocktail I’d rather splurge my daily calories on than a margarita and Cantina Laredo’s margaritas are made fresh to order. The Cinco Rita combines five types of tequila and on the rocks, it contains the perfect balance of sweet and sour flavors. Guacamole is also prepared tableside for a decadent addition to the standard chips and salsa. “We’re about gourmet Mexican food, a fresh, sophisticated dining experience and there’s really good energy here,” says Eduardo “Eddie” Estevez, General Manager at Cantina Laredo’s Palm Beach Gardens location. “This is a foodie’s Mexican restaurant.”

Some of the dishes designed to impress an advanced palette are the taqueria-style fish tacos ($11.99), braised pork carnitas ($19.99) drizzled with chipotle-wine sauce and one of the most popular items on the menu—the Cascabel Ribeye ($25.99), which is a bone-in ribeye aged for 21 days and marinated in a spicy, sweet sauce. The tacos are also topped with queso fresco, a soft white cheese gives the taco a creamy finish.

While Cantina Laredo originated in Dallas, the chef at the chain’s PGA location got his start in a different location. “I started out as a server in the Omaha location and then went to culinary school in Chicago,” says Chef Marcus Woodworth. “One of the best dishes we have is Asada y Camarones ($23.99)—steak topped with bacon-wrapped shrimp filled with oaxaca cheese and jalapeño. We use a lot of authentic sauces and we love to do traditional Mexican cuisine with a twist.”

Another one of Woodworth’s recommendations is the Camaron Poblano Asada ($22.49), which is a steak smothered with chimichurri sauce and cooked with a gigantic poblano pepper stuffed with shrimp, cheese, onions, and mushrooms.

Save room for dessert and don’t skip the Mexican Apple Pie ($6.79). This gooey, decadent dish of apple pie soaked and sizzled in Mexican Brandy Butter and smothered with cinnamon ice cream is a sweet way to end a delightful meal.

Cantina Laredo is located at 4635 PGA Blvd., in Palm Beach Gardens. Call 561-622-1223 or visit Cantinalaredo.com. There is also a Hallandale location.
