1 small onion, diced
1 pound ground beef
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon fresh-ground black pepper
1 (15-ounce) can green beans, drained
1 can condensed tomato soup
2 cups mashed potatoes
1/2 cup grated cheddar cheese, for garnish
Preheat oven to 350 degrees. Brown onions and ground beef in skillet over medium-high heat, breaking up meat as it cooks. Drain off fat and stir in salt, garlic powder, pepper, green beans and tomato soup.
Put mixture in baking pan and cover with mashed potatoes. Sprinkle with a small amount of cheese. Bake 45 minutes or until well heated. Makes 4 servings.
Per serving: 260 calories, 23 percent calories from fat, 7 grams total fat, 60 milligrams cholesterol, 25 grams carbohydrates, 3 grams total fiber, 25 grams protein, 1120 milligrams sodium.
