What started your culinary career? I’ve always had a passion for cooking.

In what other notable restaurants have you worked? Black Swan Restaurant, Villas of Grand Cypress in Orlando; Petals Marriott Hotel in Rochester, N.Y.

What’s your favorite dish to prepare at home? I enjoy cooking Spanish dishes at home such as arroz con pollo.

Was your mother or father a good cook? Yes, but I would have to say that my Grandmother is the best cook in the family.

What’s your favorite junk food? Ice cream.

What’s your favorite culinary indulgence? Any large cut of steak – Porterhouse is my favorite cut.

How do you define your culinary style? Mediterranean.

What are your culinary predictions for the millennium? I would say that people are going back to the basics.

What is your least favorite food? I enjoy just about everything and I am willing to try anything—but I would say liver.

What three vegetables would you grow in your backyard? Peppers, onion, and tomatoes.

What three things will we always find in your refrigerator? Cilantro, garlic and ham.

If you were not a chef, what would you select as your profession? Tough question, probably somewhere on Wall Street trading stocks.

What is your culinary passion? I am very passionate about letting the food present itself. You shouldn’t need to dress up a plate.

Name three spices that you cannot live without. Cajun seasoning, curry, and cinnamon
