    Now that the tomato season is in full swing, I have been playing with them even more. This week I decided on one of my favorite summer salads: panzanella. I used the recipe that our staff uses in the restaurant and scaled it down since you probably won't be cooking for forty people any time soon. Start with a variety of tomatoes to create the two cups, toasted croutons (you can even use store-bought ones), red onion, fresh basil, and feta cheese. The recipe for the dressing will make more than you need and is great on a tossed salad the next day.
