    Chef Michael Taus talks new restaurant
    Charlie Trotter protege chef Michael Taus will open Taus Authentic, what he calls an "everyday" neighborhood restaurant, in the former Prasino space in Wicker Park (1846 W. Division) early next year. Taus was for 20 years the man behind the fine dining spot Zealous, which closed its doors in 2012, and has worked in the kitchens of Le Titi de Paris under chef Pierre Pollin and Patina under chef Joachim Splichal. He says his next project, named after a phrase a former regular used to describe Taus' cuisine, will forgo the white tablecloths and instead opt for wooden tables and chairs. (He tried out 30, like Goldilocks and the Three Bears, he says, to find one that's "just right.") The food will be influenced by travel experiences and family history as well as Taus' profound enthusiasm for everything involved in opening and running a restaurant.
