Fall-Off-the-Bone Slow Cooker Short Ribs
Serves 4 to 5

These ribs are so tender you practically don't need a knife to eat them – the meat just pulls apart with a fork. The sauce is very subtle and just enhances the flavor of the beef. Serve with Creamy Parmesan Polenta for a real comfort food meal.

1 medium yellow onion, chopped
1/2 teaspoon chopped garlic
1 cup ketchup
1/4 cup light brown sugar
3 tablespoons Worcestershire sauce
1 teaspoon salt
2 teaspoons Dijon mustard
3 pounds beef short ribs (bone-in)

Whisk together the onion, garlic, catsup, brown sugar, Worcestershire sauce, salt, mustard and 1/2 cup water. Set aside.

If needed, cut the ribs into individual pieces (one bone per piece). Place in the bottom of a slow cooker. Pour the onion mixture over the top, covering completely. Cover and heat on low for 4 to 6 hours (the longer the better!). Depending on the fattiness of your beef, you may need to spoon off some grease before serving. Serve the extra sauce on the side.
