RECIPE: Grilled Tenderloin Sliders With Caramelized Onions And Blue Cheese

(Recipe Serves 4 Persons)


  • 8 2 oz. medallions of beef tenderloin steak
  • 2 tablespoons olive oil
  • 8 mini slider rolls (lightly toasted)
  • 4 oz. blue cheese
  • 8 small hearts of romaine leaf
  • 2 Roma tomatoes sliced into eight pieces total
  • Season with seal salt and cracked black pepper
  • Caramelized red onions (see recipe below)


1. Season beef tenderloin medallions with salt and pepper

2. In a large skillet or saute pan, add olive oil and sear tenderloin over high heat for a minute and one-half or two minutes per side

3. Turn off heat and top each medallion with one-half oz. blue cheese

4. Cover skillet for one minute to melt cheese. Top with caramelized onions

5. Place sliders on a lightly toasted roll and add lettuce and sliced tomato

RECIPE: Caramelized Red Onion


  • 1 red onion, thinly sliced
  • 2 tablespoons sugar
  • 2 tablespoons balsamic vinegar


1. Over high heat, saute onions until golden brown and translucent

2. Add sugar and deglaze with balsamic vinegar and let reduce by half

3. Let cool and keep at room temperature until used on slider
