Ginger Turkey Stir Fry


(recipe adapted from the best-selling book S.A.S.S. Yourself Slim by Cynthia Sass)


½ cup each:

red bell pepper, sliced into strips

chopped carrots

chopped celery

chopped red onion


½ cup cooked brown rice


3 ounces cooked extra-lean (99% lean) ground turkey


2 Tablespoons sliced almonds


1 tablespoon 100% orange juice

1 Tablespoon rice vinegar

½ teaspoon freshly grated ginger

2 Tablespoons chopped scallions

One minced chili pepper


In a small dish, whisk together the orange juice, vinegar, and ginger.  Add the scallions and chili pepper.  On the stove top over medium heat, using nonstick spray, sauté the vegetables with ginger sauce until the peppers and onions are slightly tender.  Add the turkey to heat through.  Spread a plate with brown rice, top with the vegetable mixture, and garnish with the sliced almonds.
