You asked for it: Root beer carrot cake

Q: We dined at Racks recently and had the most amazing Root beer carrot cake. I have searched as much as possible and cannot find a recipe for this moist and fabulous dessert. If you could please locate it, I would be forever grateful. — Patti Rotman, Toronto

A: This is a new one on me, which caught my attention. I've made the southern favorite, Coca-Cola cake before, but never root beer. Jackson Rogers, pastry chef at Racks Downtown Eatery + Tavern (402 Plaza Real, Mizner Park, Boca Raton, 561-395-1662, racksboca.com), takes his Root beer carrot cake over the top by decorating the plate with caramel sauce, candied pecans, fresh carrot jam and cinnamon gelato. I can't wait to try it!

Q: We used to enjoy the sauteed mushrooms at the long-gone Steak & Ale and have recently enjoyed some at SeaWatch. If you could get a recipe for them, my husband would really appreciate it. — Gloria McCluskey, Pembroke Pines

A: General manager Beth Tannar of SeaWatch On The Ocean (6002 N. Ocean Blvd., Fort Lauderdale, 954-781-2200, seawatchontheocean.com) promptly cornered Chef Darryl Shuford for the Skillet of caramelized mushrooms recipe. This is a prime example of a culinary equation that never fails: quality ingredients plus simple preparation equals great results. As Shuford puts it, "Don't step on the food too much, let the ingredients shine through." Amen.
