1/2 pound bacon
8-10 eggs (lightly beaten)
4 cups frozen, shredded hash browns (thawed)
1 1/2 cup (8 oz.) shredded cheddar cheese
1 1/2 cup (12 oz.) cottage cheese
Brown bacon and onion until crisp. Drain and break bacon into small pieces in a large bowl. Combine remaining ingredients. Stir in bacon and onion. Transfer to a 9”x13” pan sprayed with Pam. Bake uncovered 350 degrees for 35 to 40 minutes or until knife inserted near the center comes out clean. Let stand 10 minutes before cutting. Serves 12.
Potatoes can be replaced with shredded summer squash and hash browns can be replaced with tater tots. And turkey bacon or sausage can be substituted for bacon.
