New Orleans is in the heat of Mardi Gras season, with the biggest events culminating on Fat Tuesday (Feb. 12). But for those easily overwhelmed by massive, rowdy crowds and daily parades, there’s no reason to travel when you can get a taste of the Bayou right here at home.

You’ll get an authentic experience at Heaven on Seven (111 N. Wabash Ave., 312.263.6443), the New Orleans-themed restaurant that has been cranking out hearty portions of gumbo, jambalaya, and red beans and rice for more than 25 years. Chef/owner Jimmy Bannos Sr. puts his spin on traditional dishes, plus his spicy, signature cornbread is a little taste of heaven. Here’s a recipe for what he’s dubbed jalapeño-cheddar blasters that are accompanied by honey-jalapeño dressing.

Jalapeno-Cheddar Cornbread

1 ½ cups all-purpose flour

1 cup, 2 tbsp finely ground corn flour

2/3 cup granulated sugar

5 tsp baking powder

½ tsp salt

1 large egg

1 1/3 cups milk

5 tbsp unsalted butter, melted

1 cup grated cheddar cheese

3 tbsp seeded and chopped jalapeños

Honey-Jalapeño Dressing

2/3 cup mayonnaise

½ cup whipping cream

1/3 cup thinly sliced green onions

1 ½ tsp seeded and minced jalapeños

4 tsp honey

¼ tsp Worcestershire
