Lemony Lime Squares
Vegetable oil spray
1cup all-purpose flour
1/4 cup sugar
1/4 cup chopped pecans
1/4 cup light stick margarine, cut into 4 pieces
2/3 cup sugar
1 large egg
2 tablespoons all-purpose flour
1/2 teaspoon grated lemon zest
3 tablespoons fresh lemon juice
1/2 teaspoon grated lime zest
3 tablespoons fresh lime juice (about 2 medium limes)
1/2 teaspoon baking powder
2 tablespoons confectioner's sugar
Preheat oven to 350 degrees. Spray an 8-inch square disposable baking pan with vegetable oil spray.
In a medium mixing bowl, combine flour, ¼ cup sugar, pecans and margarine; beat with electric mixer on medium until mixture is crumbly. Press evenly on bottom of baking dish.
