Seaside Grill's Fire Jerk Shrimp

Adapted from Seaside Grill. The Jerk seasoning is made fresh daily at the restaurant. Feel free to substitute a store-bought brand.

12 16-20 count shrimp, peeled and deveined

2 tablespoons Jerk seasoning (see recipe), separated

2 cups dark beer, separated

1 tablespoon unsalted butter

1 teaspoon minced garlic

2 tablespoons heavy cream

2 tablespoons Pico de gallo (see recipe)

1 Using a medium bowl, combine shrimp, 1 tablespoon Jerk seasoning and 1 cup dark beer. Cover, refrigerate and marinate for 24 hours. Drain and discard marinade.

2 Using a medium sauté pan over medium high heat, heat the butter. Add marinated shrimp, remaining tablespoon of Jerk seasoning and garlic. Cook, stirring, until shrimp are pink, about 3 to 5 minutes. Add remaining cup of beer, heavy cream and Pico de gallo. Reduce heat to medium and simmer until sauce reduces and thickens, approximately 3 minutes.

Makes 3 appetizers.

Seaside Grill Jerk seasoning

This seasoning is also great on grilled chicken, fish and vegetables.

4 tablespoons thyme

1 tablespoon allspice

1 teaspoon red pepper flakes

1 teaspoon nutmeg

1 teaspoon oregano

Using a small bowl, combine ingredients. Store any unused spice in an airtight container, away from heat and light.

Makes 3/8 cup.
