After draping a slice of French-style ham over mayo-dressed leeks and sweet peas, Miller pipes a dab of cream cheese doctored up with fresh herbs and garlic on top before garnishing with a slice of egg, tomato and her favorite pickle, a Polish import called Polanaise. "There's only one distributor in Chicago that carries these pickles," said Miller. "If you've ever had it, I'm telling you, you will never go back to another pickle."
