Secreto

Berkshire Pork Secreto (can be done with Pork Tenderloin or Pork Belly for the home cook)

Brine:

2 qt Water

1 cup salt

1 cup sugar

Allow the pork to brine for 12 hours.

Red Bell Peppers:

3 red bell peppers, roasted peeled, julienne

2 cups blanched green beans
