Ingredients:
8 ounces spinach or baby spinach
1/2 cup packed parsley leaves
1 diced and roasted sweet potato (peel one sweet potato, dice and roast in the hot oven for 15 minutes)
3 ounces feta cheese
1/2 cup grape tomatoes
2 tablespoons of finely sliced red onions
6 onces chick peas
Juice of one lemon
2 TBS. good olive oil
Black pepper
Salmon:
2 4 ounces salmon filet
Salt and pepper
1 TBS. safflower oil
Directions:
Salt and pepper salmon filet. Heat oil in nonstick pan, and sear salmon filets. Finish off in hot oven for about 10 minutes.
