Super Snack: Touchdown Tostadas
Touchdown Tostadas

12 Crisp Corn tostada shells
2 cans organic vegetarian refried beans

(Cooked chicken or shrimp are optional)
2 cups shredded Mexican Blend cheese
1 cup sour cream
2 tablespoons heavy cream
2 teaspoons hot sauce
4 cups shredded lettuce
Watermelon Salsa (see previous recipe)

Spread each tostada shell with a thin layer of refried beans. Place them on a baking sheet to accommodate. (If using chicken or shrimp, sprinkle an even layer of such over the beans at this point.)
Sprinkle the cheese over the beans. About 10 minutes before serving, place in a pre-heated 400 degree oven for about 10 minutes or when cheese is golden and bubbly.
Meanwhile, mix together the sour cream, heavy cream and hot sauce. Pour in a squirt bottle.When the tostadas are ready, remove them from the oven. Sprinkle the lettuce on the field of tostadas evenly as if grass.
Squirt sour cream lines on the lettuce like football field lines. Serve with watermelon salsa.
