Vanilla Poached Peaches with Honey Balsamic Reduction


Ingredients:
1 cup water
¼ cup Agave Syrup
1 teaspoon Meijer Vanilla
4 large Peaches, pitted and quartered with skin on
½ cup Meijer Balsamic Vinegar
2 Tablespoons Meijer Honey
1 pint Meijer Premium Vanilla Ice Cream

Cooking Instructions:
Combine water, agave syrup, vanilla and peaches in a medium saucepan. Simmer over low heat, stirring occasionally, for about 15 minutes or until peaches reach desired softness.
At the same time in a small saucepan, combine balsamic vinegar and honey. Simmer over low heat for about 15 minutes or until the volume of vinegar is reduced to half.
Serve peaches over ice cream and finish with a light drizzle of balsamic reduction. Enjoy!
