Ingredients:
1 cup cooked wild rice
4 oz small diced bacon
½ white onion, small diced
½ red bell pepper, small diced
1 branch celery, small diced
1 clove garlic, minced
1 small Yukon gold potato, small diced
1 tbsp chopped fresh thyme
1 tbsp chopped fresh tarragon
8 oz smoked trout filet, skin removed and lightly pulled apart
4 oz butter
2 oz flour
16 oz clam juice or chicken stock
1 cup heavy cream
1 lemon
4 oz chives
Salt
Bread to serve sliced
