J Restaurant is part of Taste of Hartford, which is going on until February 3, 2013. The executive chef, Julio Cancho, shares a recipe for Pesto Crusted Salmon.
Serves 2
Ingredients:
1 lb fresh cut salmon
4 oz. basil (diced into small pieces)
4 oz. panko breading
2 cups Uncle Ben's Rice
2 cups of seasonal vegetables
4 tablespoons of extra virgin olive oil
1 small carrot (diced)
2 celery sticks (diced)
2 cups of water
1/2 yellow onion (diced)
salt & pepper
spanish zazon
Goya seasoning
balsamic reduction
rice
Directions:
In a small pot on medium-high flame, add 2 tablespoons of extra virgin olive oil and sauté the onions, carrots, celery and one package of Spanish Sazon. Next, add the water and bring to a boil and add the rice. Cover and let simmer for 20 minutes.
Salmon:
Preheat oven to 350 degrees.
Portion your salmon into 2 pieces. Sear the salmon in a hot skillet to form a crust on the side without skin. Remove from heat. Mix your panko breading and the basil to create your crust.
Place your salmon skin side down and place the mixed breading on top of your salmon. Put on a cooking sheet and bake in oven for 20 minutes. Meanwhile sauté your vegetables with the remainder of your olive oil.
