Gluten Free Apple Crisp Recipe

6-8 servings

Filling

6-8            Medium Apples, peeled and sliced into ¼” thick slices

2T              Maple Syrup

3/4cup       Unrefined sugar

1T              Lemon juice

Pinch         Sea Salt

2t               cinnamon

Topping

4T              Unstalted Butter or Earth Balance, cut into 1/4” cubes

2 pkg         Bakery On Main Gluten Free Instant Hot Cereal

Directions

Combine apples, maple syrup, sugar, lemon juice, salt and cinnamon in a large mixing bowl and turn gently until apples are coated.   Adjust seasonings to taste.

Empty two packages of Bakery On Main instant hot cereal and cubed butter into food processor.   Pulse until mixture comes together in a cohesive mass.  Add a little water if mixture is too dry to stick together.

Layer apple mixture evenly into baking dish.   Pull topping apart into small chunks and distribute evenly over the apple mixture.

Bake in 375 degree oven for about 45 minutes.  It is done when the topping is golden brown and the apples are soft.

Let stand for 10 minutes and serve with vanilla ice cream or your favorite non-dairy vanilla.
