3 large, room temperature eggs
1 1/2 cups milk, room temperature
1/4 teaspoon: nutmeg and ground red pepper
1 cup grated Gruyere or Swiss cheese
1 (9-inch) partially baked, pie crust
7 - 8 strips bacon, cooked, or 1/2 cup finely diced cooked ham
1. Heat oven to 375 degrees. Beat eggs and stir in milk, nutmeg and red pepper; mix until well blended. Sprinkle half the cheese on the bottom of the pie shell. Crumble the bacon over the cheese. Pour in egg mixture. Sprinkle remaining cheese on top.
2. Place on the bottom oven shelf; bake 30-35 minutes. Let quiche cool for 5 minutes; cut into wedges.
