Savory Chicken Nuggets

1 ½ cups toasted O’s cereal

1 ½ cups corn flakes

½ teaspoon each onion powder and garlic powder

½ teaspoon salt

¼ teaspoon black pepper

1/8 teaspoon ancho chili pepper

1 pound boneless skinless chicken breast, cut into bite-size nugget pieces

¼ cup white whole wheat flour

2 large eggs, beaten with a fork in a small bowl

Preheat oven to 425°F. Lightly oil a large (10 x 15-inch or larger) baking sheet or coat with vegetable cooking spray. Set aside. Crush O’s and corn flakes in a zippered plastic bag with a rolling pin (or place in a food processor and pulse until a most completely crushed.) Combine cereal crumbs with all spices and seasonings in a medium bowl.  Place flour in a pie plate. Coat chicken nuggets with flour, then dip in egg, then finally in cereal mixture. Place on baking sheet and cook until golden brown and done throughout, about 12 to 15 minutes.  Makes 4 servings.
