*This recipe will make two sweet potato pies
12 Medium sized sweet potatoes or yams
1/4 lb. of Butter
2 to 3 cups of sugar (make this according to taste)
Nutmeg to taste
1/4 to 1/2 cup of Evaporated Milk
2 Tablespoons of Vanilla Favoring (real Vanilla)
Apple Jack Brandy - one tablespoon (This is part of the Wheaton family recipe and we love this)
PIE CRUST: You may use ready made frozen pie crust shells which need to be thawed to room temperature. However, the best is home made shells.
Bake - do not boil - potatoes until done in oven on 400
Peel while hot and add potatoes to electric mixing bowl
Add butter, sugar, eggs, nutmeg, flavoring and milk alternately to taste
Mix ingredients on low setting
When satisfied with taste, add one tablespoon of Brandy
Fill shells and bake for 30 - 45 minutes at 325 until center is stiff.
The Harrison Museum of African American Cultures is holding a Sweet Potato Pie Bake-Off on August 27th.
It will be be held at the Claude Moore Education Complex in Roanoke from 6:00 p.m. until 8:00 p.m.
