Inspired by the rustic -- and time-consuming -- French classic, our cassoulet, made with leftover turkey or chicken and canned beans, makes a simple, hearty supper.

Quick Cassoulet

Makes 6 servings, 1 1/3 cups each.

Total Time: 1 hour 5 minutes

1 cup fresh whole-wheat breadcrumbs (see tip)

2 teaspoons extra-virgin olive oil

2 medium onions, finely chopped

1 medium carrot, finely chopped

2 cloves garlic, minced

1/4 pound turkey kielbasa sausage, thinly sliced

1 14-1/2-ounce can diced tomatoes

1 cup reduced-sodium chicken broth

1/2 cup dry white wine

2 15-1/2-ounce cans great northern or cannellini beans, rinsed

1 1/2 cups diced cooked turkey or chicken

1 1/2 teaspoons chopped fresh thyme or 1/2 teaspoon dried

1/4 teaspoon salt, or to taste

Freshly ground pepper to taste
