Spinach Power Salad
The name makes it sound veg-heavy, but this salad should satisfy greens-resisting carnivores. The bed is baby spinach. From there, shades of Cobb salad appear in the form of applewood-smoked bacon and diced hard-boiled egg. The crisp "frizzled" onions (think French's) add a great flavor and texture, contrasting with toothsome coins of roasted mushrooms. The dressing is a Vidalia onion vinaigrette — smoky and requiring at least two breath mints afterward. Top to bottom, a terrific salad.
