Sayulita, a new taco and tequila bar pop-up, has taken over a grassy area of Skybar at Mondrian on the Sunset Strip. You can sit at a long communal table, or lounge on a blanket and order fish tacos and strong margaritas, no shoes required.
The pop-up soft opened this week and will officially open May 6. It's a small menu of tacos, including the pescado with crispy battered fish, cotija, avocado and corn relish, and salsa roja; the Filipino sisig taco with crispy pork belly and shoulder, charred melon, black pepper, chiles and salsa; and the carne asada taco with 24-hour sous-vide short rib, Mexican crema, guacamole, pico de gallo and shredded cheddar in a crispy shell.
All of the tacos are priced at $8 for an order of two. You can also order chips and salsa, guacamole and churros with Mexican hot chocolate sauce.
The man behind the tacos is Josh Gil, who just two weeks ago took over as the head chef at Brian Malarkey's Herringbone at the hotel. Gil, who has cooked at Joe's Restaurant and BLT, also owns Tacos Punta Cabras in Santa Monica with Daniel Snukal.
The cocktail list of mezcal- and tequila-based drinks ($16) was put together by The Soigne group, run by partners Josh Goldman and Julian Cox. Cocktails include the "Butteryfly Kisses" with Herradura Reposado, Del Maguey Vida Mezcal, Aperol, lemon, strawberry, firewater bitters and the "Barbacoa" made with Del Maguey Vida Mezcal, red bell pepper, chipotle, lime, ginger and agave.
According to Skybar General Manager Kendra Cole, Sayulita could be a permanent fixture, or switch to another concept toward the end of the year.
