Vegetable Quiche

Serves 8

1 prepared pie crust 7 oz frozen vegetable mix, I used Green Giant Immunity Blend 15 oz container of egg substitute 1/4 c shredded lowfat cheese, your choice of flavors Pinch of dried Thyme Salt and Pepper to taste

Preheat oven to 350 degrees. Microwave vegetable mix as directed on the container. Allow to cool slightly. Pour vegetables into unbaked pie crust and top with cheese. Add the egg substitute being careful not to overfill. Sprinkle on the thyme, salt and pepper. Bake for about 45 minutes or until eggs are set. Serve with a small side salad!
