Yes, this is a tough one, we know. But, again, hiding it may be your best option, and the nutritional payoff (iron, vitamins B, C and K, and beta-carotene) makes it a must. It has a mild flavor, so it can be added to foods with great success. Chop it small and add to a quiche or a lasagne. (Use your favorite quiche recipe, substitute plain, lowfat yogurt and lowfat cheese, and leave off the crust for an even healthier dish.) Courant file photo
