Madison Beach Hotel hosts an Opus One wine dinner Oct. 28 at 6:30 p.m., featuring two vintages of the wine plus other selections from Robert Mondavi. Special guest France Posener, the Eastern Divisional Sales Manager for Opus One, will lead guests through each wine pairing.
Passed hors d'oeuvres, including quail egg Benedict, scallop ceviche, apple and foie gras, mini Brie en croute, with Mondavi Pinot Noir
Poached halibut cheek with sweet pea puree, oven roasted tomato, Osetra caviar: served with Robert Mondavi Fume Blanc
Wagyu beef strip loin with butter poached lobster claw, wild mushroom ragout, cognac chantilly: Served with Opus One, 2007
Duck trio: pastrami cured breast, foie gras, confit, butternut squash silk, baby kale, 10 year balsamic: Served with Opus One, 2010
Panna cotta with poached pear, candied walnut, Apricot Gelee, Sour Cream Cake, served with Robert Mondavi Moscato D'oro
