Miya's Sushi on Howe Street bills itself as one of the first sushi restaurants in New Haven, having opened in 1982. The restaurant has distinguished itself as the first and only sustainable sushi restaurant in the Northeast, with a large vegetarian menu and avoiding over-fished species. Owner Bun Lai has transformed the restaurant's menu entries into anything but traditional, combining ingredients rarely imagined in sushi into unique culinary concepts. A tour of the menu is an experience all its own.
