What's the best night to come to your bar?

Friday night, we have a DJ who plays a mix of everything from all genres of music. The ages range from late 20's to late 30's. It's a great fun crowd.

What infusions are you making?

Right now I'm thinking Sake infusions. We just opened a month ago and I want to offer something different. I'm thinking lychee sake, a kiwi strawberry sake; it's going to be trial and error. I have plans. Right now I make a cucumber margarita served up in a martini glass. I don't make it with triple sec, I make it with fresh cucumbers, Espolon tequila and a homemade simple syrup.

From where do you draw your inspiration?

I love the bar atmosphere. I love the social interaction. I've been doing this since I was 18 years old. I believe you have to be diverse. You can't only serve one thing. Change is also good and needed. I am a foodie and I watch the Food Network and look for recipes constantly.

The next big thing in cocktail is...

For years I was ordering a ton of Grey Goose, now I order a ton of Jameson. Whisky and scotch are moving to the younger crowd. The flavored vodka trend has impacted the harder alcohol. There is now Jack Daniels honey and Crown Royal maple.
