Walking into rustic Republic in Bloomfield around lunch time on a Wednesday, spunky, curly-haired bartender Rebekah was helpful in pointing me in the right direction of a wintery cocktail I was craving. Fun fact: she's part of Hartford Area Roller Derby.
Q: I noticed you use a lot of local ingredients in your drinks such Onyx Moonshine, do you guys prefer to work with local vendors?
A: Yea, I feel like we try to do that with our food too. We get a lot of our vegetables from Rosedale Farms, we like to keep it local with a lot of local drafts. We like to support our own community.
Q: What is your favorite time to work?
A: My favorite time to work is Friday lunch. It's busy, I get to still make a lot of drinks but I can still go out and have my night too.
Q: What is your favorite drink to make?
A: My favorite drinks to make are the same I like to drink — anything that is super sweet, super girly and tastes like chocolate. Anything that can be confused with dessert, that's what I like to make.
Q: Ever do anything creative with beer?
A: For the fall we were doing a UFO pumpkin beer with vanilla vodka and a sugar and spice rim. It was a big hit.
